inI Love Pumpkin!
Since I was waxing poetic about my undying love for Libby’s canned pumpkin (yes, there is a pumpkin shortage, and yes, it’s not seasonal in some parts of the country… I’m so jealous!) last night, I thought I’d share with you my Top 5 Pumpkin Recipes. Because pumpkin isn’t just for pie!
FIVE: Pumpkin Dip <—Not an original recipe but epic enough that it deserves a shout out.
FOUR: Pumpkin Spice Toasted Quinoa
THREE: Sweet Breakfast Burrito
TWO: Pumpkin Spice Latte Baked Oatmeal
ONE: Pumpkin Yogurt So amazing and simple that it was even featured on Women’s Day as a favorite healthy snack!
Delicious, huh? Now do you see why I love pumpkin so much? It can be savory; it can be sweet; it can be a snack; it can be a meal! Long time pumpkin!
And although it’s not available in Charlotte yet, I thought I’d celebrate my love for pumpkin this morning with another great Code Orange breakfast featuring….
Sweet potato!
To make a simple mashed sweet potato for use in a breakfast bowl, wash the sweet potato, stab it with a fork, wrap in a wet paper towel, and microwave for 5 minutes or so. Carefully peel off the skin and cut into cubes, and then pop in the freezer for five minutes or so to cool it off quickly.
Served with Honey Green Yogurt, Go Lean cereal, and chia seeds:

Pumpkin is the best. My mom makes an amazing spicy pumpkin soup, which I am practically dying to have again. (She only makes it once, MAYBE twice a year!) And there’s a spicy pumpkin-black bean chili I want to test out.
But I do love a good slice of pumpkin pie … with a dollop of fresh whipped cream. YUM!

OK, pumpkin has been added to the shopping list. (And–since the boyfriend doesn’t like it, it will be all mine! *fistpump* :D)
I also now want a Pumpkin Spice Latte, and sadly there isn’t a Starbucks within 100 miles of me. 🙁

I love pumpkin, but sweet potatoes are definitely my favorite orange veggie. I’ve never had one with breakfast though, it sounds (and looks) delicious!

I love pumpkin. I will eat it warmed up out of the can with a little bit of cinnamon sugar and butter dabbed on. I also like pumpkin custard (aka pumpkin pie without the crust) =]

I loveeee pumpkin. I look forward to fall so much solely for pumpkin oatmeal, pumpkin yogurt, pumpkin in smoothies…. you get the point! That breakfast burrito looks unbelieveable! Will have to try that one this year.

Your breakfasts have been inspiring me so much! When I went grocery shopping yesterday, I bought a few different fruits, yogurt, and Go Lean cereal. This morning, I had a breakfast of Kashi’s Go Lean Honey Almond Flax cereal (probably a handful and a half) with vanilla yogurt (a couple spoonfuls) and sliced banana. I ate it at 6:45am (and I ate it SLOWLY so I could allow my brain to catch up and let me know when I was full), and it’s now 9:45am, and I’m still at that “happy full.” It was so delicious! I’ll probably satisfied until my lunch break at 11:30! 🙂

I love sweet potatoes at any time of the day, but just don’t like them microwaved. Can’t do it. (They’re never as soft and well done as in the oven.)

I love pumpkin. I live in NYC so I can find pumpkin regularly. This fall I am going to try and make my own pumpkin puree! That will be an interesting venture. My favorite way to enjoy pumpkin is in a smoothie… pumpkin pie smoothie to be exact!

I’m not really a pumpkin convert. I think it’s an American/British thing. Everyone here is nuts over it but it was never even on my radar until I moved over. I was really creeped out by canned pumpkin til I tried it! I like it but…not as obsessed as some people I know 😉

Unfortunately, we give canned pumpkin to our dog (when she has soft stool) quite frequently, so now canned pumpkin always reminds me of dog poo 🙁 Sad.

From what my boss tells me who feeds her two golden retrievers pumpkin everday there was a bad pumpkin shortage last year and this year so it may be hard to find Libby’s Pumpkin as I know she has been searching herself high and low. =(

Pumpkin still AWOL here in the NW Indiana region but I saw on the news that the pumpkin harvest will be good this year!! Woot! Hopefully that means it’ll start turning up again soon! I soooo miss it!

I’m so excited for pumpkin!!! It’s my reason for being in the fall. Well that’s an exaggeration but I still love it. I love the yogurt, but the dip and burrito look truly amazing. I cannot wait to stockpile cans of Libby’s!

I would be very cautious about putting hot or warm food in a refrigerator or freezer to just cool it down. The food cools at an unequal rate as some parts will be hotter than others which can encourage the growth of some bacteria. That is what I was told by health professionals and chefs alike. Food should be allowed cool completely before being transferred. Maybe baking/cooking your sweet potato in bulk in advance and freezing in portion sized amounts would be good. Sorry for being a downer. I am quite freakish about food hygeine. 🙂

Love your pumpkin recipes! I will definitely be trying them over the long weekend.
Another one of my favorites in pumpkin cream cheese. Beat 8-ounce package cream cheese,1/2 cup canned pumpkin, 1/4 cup sugar, 3/4 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla put in fridge for at least 30 mins (I usually let it sit 12 hours).
